The Caribbean Platter
Not many are aware of the amazing culinary history of the Caribbean. The ancient Caribbean was first populated by the Caribs, Arawaks and the Taino Indian tribes. These small tribes had their own special methods of cooking. The Taino tribe cooked meat loaves and fish in big earthen pots. While the Arawaks were in habit of slowly cooking meat on green wooden stripes called barbacoa. Same process is now known as barbeque. Later when the Europeans landed here with their African slaves, innovative cooking further got a boost.
